Meet Johnny! Inspiring our colleagues and delighting our guests!
Johnny works behind the scenes leading the incredible kitchen team in The Dining Room restaurant. We took some time out to sit down with him, and find out why he enjoys working with Fallon & Byrne so much!
What was your first role in Fallon & Byrne and what roles have you had since starting?
I started in The Dining Room restaurant in Fallon & Byrne as a Sous Chef, after some time I progressed and am proud to say that I am now the Head Chef of The Dining Room.
What initially drew you to apply to work with Fallon & Byrne?
For me, it was having the chance to work in an industry that means so much to me, but that provided me with a much better work life balance.
What challenges have you faced along the way, and how did you navigate them?
I think we should all be very proud of what we're doing her, The Dining Room team in particular, and I have always worked on helping my team to be proud of their work and their accomplishments.
What are some of the most valuable skills or lessons you've learned here?
Communication. Communication, not just with your immediate team, but also the wider company is so important. I would say as well patience, it's important to remember that everybody is learning. Having that patience, helps to encourage new members of the team.
How do you keep learning and pushing yourself in your current role?
I have learnt so much about new cooking skills from our Development Chef Hugh. He's always there to discuss new ideas with.
Likewise with Vincent the Managing Director, he has really helped me to grow and flourish as a people manager and always has time to help with any questions I have.
Not just Hugh and Vincent, but also the wider team at Fallon & Byrne, for example I'm constantly learning about new food products from Purchasing and the Foodhall, and this helps to inspire me as a chef.
What achievements are you most proud of so far?
That's an easy question to answer! For me it's being able to develop a team to work together and achieve great things. The Dining Room kitchen team are all working together towards excellence, every day.
What advice would you give to someone just starting on their journey in Fallon & Byrne?
Ask questions and be honest. Nobody knows all the answers on their first day, their is a strong culture of colleagues helping one another and help and advice is always there.
